Pilot Fish Maltese Style
Ingredients
4 pilot fish (fanfri)
2 tbsp olive oil
2 garlic cloves, crushed
4 spring onions, sliced
1 punnet cherry tomatoes, halved
2 tbsp black olives, stone removed
1 sprig of fresh marjoram or mint
1 small glass white wine
1 small glass water
Salt and pepper
Method
Place a deep pan on medium heat. Add the olive oil, garlic, and onions. Sauté for 1-2 mins. Add the tomatoes, olives, herbs, salt, and pepper. Give it a good toss. Place the fish on top of the tomato fry up and turn the flame onto high. Once the tomatoes start sizzling, pour in the wine and water and cover. Lower the flame to medium again and allow the dish to slowly cook for approximately 20-30 mins or until the fish is cooked. To serve, distribute 2 pilot fish per portion along with a good scoop of the tomato compote. Accompany this dish with a fresh ftira or Maltese bread.
